Neapolitan sauce is the cumulative name provided (outside Italy) to various standard tomato-based sauces derived from Italian food, usually served over or along with pasta. In Naples, Neapolitan sauce is merely referred to as salsa, which essentially equates to 'sauce'. Basil, bay fallen leave, thyme, oregano, peppercorns, cloves, olives, and mushrooms might be included depending upon taste choices. Some versions include carrots and celery. Outdoors Italy, the fundamental sauce is vegetarian, although meat such as minced beef or sausage can be included. By contrast, in Italy, the sauce meal carrying Naples in its name is a sauce called Neapolitan ragù.
